Preheat oven to 450 degrees.
Mix bread crumbs, rosemary, thyme, salt and pepper, and olive oil together in a large bowl.
Brush lamb with mustard and then dredge lamb through bread crumb mixture. Arrange lamb, bone side down, in a lightly greased baking dish.
Cook for 20-25 minutes. Then, turn broiler on for 2 minutes to crust the bread covering. Remove from the oven and let the lamb rest for about 5 minutes before serving.
